The first 100% Chardonnay traditional method sparkling created by Anthony. This style was inspired by Ian’s sparkling Chardonnay made back in the late 1990’s. The grapes were hand picked, with only the best fruit chosen – nothing under ripe or over exposed to sunlight. Using a whole bunch pressing technique allowed us to only press the grapes very gently, extracting a very low yield of juice, being freshest and most vibrant! We were definitely aiming for quality over any form of quantity – achieving a pure and vibrant base wine. We bottled this wine back in 2014 and have left it on the yeast lees to impart a wonderful toasty and complex palate (the butterscotch flavours). It was also bottled with a very low ph (high acidity), which means it is still fresh as a daisy even after nearly 6 years. All of the patience and ageing has been done, the wine is now in perfect condition to enjoy. Only 350 bottles produced so one of the most exclusive wines on our list. Ants favourite sparkling he has produced to date.
