The Olivine Rouge is another sparkling wine produced in the Traditional Method. Crafted from 100% Swan Valley Shiraz fruit, this wine is an excellent example of what sparkling red can be. Short term ageing in old French oak has softened the tannins prior to secondary fermentation. This wine is perfect on its own or as an accompaniment to strong game meats.
Colour: Medium ruby hues.
Nose: Lifted cassis, black cherry, mulberry.
Palate: Plum, blackcurrant, black cherry, mulberry.
Drink: Chilled, now up to 2 years.
Residual Sugar: 18g per litre.
